If iTunes gives you a "friendly" reminder that a new update to the iphone is available and if you want to install it JUST SAY NO! Note that in the near future, iPhones will most likely be sold with 1.1.1 already installed in which case you are screwed. Who wants to waste time changing to another network- the only one being T-Mobile? And who cares about 3rd party apps when Apple has some excellent apps which will be incorporated free over the next almost 2 years.

DON'T DO THIS! It's not needed, and if you DO want to be able to add software to your phone someday, you won't be able to do so if you install this "upgrade".
